Developments in the prediction of meat carcass chilling.

Summary

As part of its input into a EU concerted action programme on very rapid chilling, the University of Bristol has carried out a review of predictive methods of meat chilling. Early predictive methods used log linear transformations of experimental data to allow extrapolation of results to other chilling conditions. Extensive charts are now available for both beef and pork chilling using these methods. A simple user-friendly finite difference predictive programme "BeefChil" has been developed by the University and its use in system and equipment development is described.
