Summary

Minimally processed, freshlike products have become commonplace in the food industry recently. As a consequence, reduced thermal inputs during preservation of food products are being sought. The author summarizes some key development activities concerning some nonthermal food sterilization processes, including electric and/or magnetic pulsations, pulsed light, high pressure, CO2 sterilization.
