THE AUTHOR SURVEYS THE PROCESSING CONDITIONS OF SPECIALITIES WITH SMALL FROZEN BROILER PIECES, THE WEIGHTS OF WHICH ARE COMPARED IN A TABLE WITH THOSE OF GROUND BEEF AND PORK, STRESSING THE HAZARDS OF CONTAMINATION DURING SUCH PROCESSING. HE DISCUSSES THE POSSIBILITY OF APPLYING TO THESE PIECES THE SPECIFICATIONS INCLUDED IN VARIOUS ITEMS OF THE REGULATIONS OF THE FEDERAL REPUBLIC OF GERMANY ABOUT FROZEN GROUND MEAT FROM BIG ANIMALS. THEIR STORAGE TIME AT 255 K (-18 DEG C) SHOULD NOT EXCEED 6 TO 8 MONTHS. G.G.
