THE AUTHOR SURVEYS THE PROCESSING CONDITIONS OF SPECIALITIES WITH SMALL FROZEN BROILER PIECES, THE WEIGHTS OF WHICH ARE COMPARED IN A TABLE WITH THOSE OF GROUND BEEF AND PORK, STRESSING THE HAZARDS OF CONTAMINATION DURING SUCH PROCESSING.
