Summary

The effect of freezing on the viability of must yeast was studied. The effects of using two different freezing temperatures (-20 and -80 deg C) and the potential influence of must dilution were compared. The results obtained revealed that the freezing temperature had a significant effect on cell viability (yeast were less markedly affected at -80 deg C than they were at -20 deg C). On the other hand, must dilution was not as influential as the temperature; however, the lower it is, the lower the probability of cell death will be.
