Summary

THE EFFECT OF FREEZING ON PHYSICAL AND FUNCTIONAL INTEGRITY OF NATIVE MYOFIBRILS FROM BOVINESTERNOMANDIBULARIS MUSCLES WAS STUDIED USING 3 FINAL TEMPERATURES: 253, 223, 193 K (-20, -50, -80 DEG C) AND 2 FREEZING RATES (2 AND 10 K/MIN). THE PHYSICAL INTEGRITY WAS NOT AFFECTED FOR THE AMOUNT OF (UNFREEZABLE) WATER BUT THE THERMAL STABILITY OF MYOFIBRILS WAS SLIGHTLY DECREASED WITH THE SLOW FREEZING RATE. THE TREATMENTS AFFECTED MORE SIGNIFICANTLY THE FUNCTIONAL PROPERTIES OF THE MYOFIBRILLAR STRUCTURE. THE BENEFIT OF A RAPID FREEZING PROCESS CAN BE CANCELLED BY THE NEGATIVE EFFECT OF THE OFTEN ASSOCIATED LOW FREEZING TEMPERATURE.
