Summary
The effect of freezing-thawing on invertase activity was studied by varying the following parameters: chemical nature of the buffer, pH, and freezing rate. The cryoprotection capability of polyols at 10 grams per liter concentration was also determined. Several results are given. Nevertheless, the best quaternary system, pH-buffer-cryoprotectant-freezing rate, must be fixed to each specific situation.
