Summary

CARP MYOFIBRILS WERE GROUND IN PRESENCE OF POLYPHOSPHATES AND OF VARIOUS SORBITOL CONCENTRATIONS. THE MIXTURES WERE FREEZE-DRIED, POWDERED, PACKAGED IN POLYETHYLENE BAGS AND STORED FOR 3 MONTHS AT 293 K (20 C). AT REGULAR INTERVALS, THE QUALITY OF THESE SAMPLES WAS OBSERVED BY MEASURING THEIR SOLUBILITY, VISCOSITY AND ATPASIC ACTIVITY. THE SORBITOL LEVELS PROVIDING THE OPTIMUM PROTECTION OF PROTEINS SEEM TO BE 3 OR 5%. (Bull. bibliogr. CDIUPA, FR., 13, N.8, AUG. 1979, 133549.
