THE AUTHORS INVESTIGATED THE CORRELATIONS BETWEEN THE STORAGE LIFE OF PASTEURISED MILK AND TOTAL FLORA, THE THERMORESISTANT FLORA AND SPORES IN RAW MILK. THE STUDY SHOWED THE INTEREST OF THE THERMORESISTANT MICROORGANISM COUNT OF RAW MILK TO BE PASTEURISED. THIS COUNT DETERMINES THE MICROORGANISM COUNT OF PASTEURISED MILK AND ITS STORAGE LIFE WHEN IT IS NOT RECONTAMINATED. THE RESULTS CONFIRM THE ESSENTIAL ROLE OF TEMPERATURE IN THE PRESERVATION OF PASTEURISED MILK.
