Summary

SAMPLES OF MEAT TAKEN FROM 16 CARCASES WERE DIVIDED INTO FIVE GROUPS. SOME OF THE SAMPLES FROM EACH CARCASE WERE ELECTRO-STIMULATED 30 AND 240 MIN AFTER SLAUGHTER. OTHERS WERE EXPOSED TO AN ELECTRICAL FIELD 30 AND 240 MIN AFTER SLAUGHTER. THE MOST DEFINITE REACTION IN THE GREATEST DROP IN PH WAS NOTED IN THE CASE OF ELECTRO-STIMULATION 30 MIN AFTER SLAUGHTER. THE ELECTRICAL FIELD CAUSED CONSIDERABLE CHANGES IN THE MEAT WHEN IT WAS EXPOSED AT THE BEGINNING OF RIGOR MORTIS. AT THIS TIME CHANGES IN MEAT COLOUR AND ORGANOLEPTIC PROPERTIES WERE OBSERVED.
