Evaluation of formaldehyde content in some frozen seafood products.

Summary

Tests were done on the formaldehyde content of 172 lots of frozen seafood sampled by Italian customs over a period of three years. A formaldehyde content above the recommended limit of 10 mg/kg was found in 31 lots. The highest levels were found in John dory fish, shrimps and lobster. No correlation was determined between high formaldehyde content and the presence of residual sulphite. Based on these results, 50 mg/kg is suggested as a maximum allowable content in John dory fish and crustaceans. This level should be considered endogenic and not carcinogenic to the consumer. A.P.
