Summary
The content of formaldehyde in frozen crustaceans, previously treated and not treated with sulphur dioxide were evaluated. The results obtained confirm that the crustaceans treated with sulphur dioxide produce a large amount of formaldehyde. The authors are looking for a revision of the allowed limits of formaldehyde in fish products, according to the current law in Italy.
