Summary

In the work the content of formaldehyde in frozen crustaceans and Gadidae, previously treated and not treated with sulphur dioxide, were evaluated over a period of one year. The results obtained confirm that the crustaceans treated with sulphur dioxide produce a notable amount of formaldehyde. The untreated Gadidae produce formaldehyde in huge amounts, whereas those that were treated give formaldehyde in small quantities. Should this data be confirmed by other researchers, it would be advisable to revise the limits of formaldehyde currently allowed in fish products by natural laws.
