Summary
This study presents the results of different experiments related to the refrigeration temperature of rabbit carcasses. Temperature, humidity and velocity parameters of the air are varied. The chilling time and core temperature changes in the thigh are measured. Weight loss is evaluated. A cylindrical model allowing the reproduction of the same conditions is updated. Results of the simulation and results of the experiments are measured.
