A GENERAL FORMULA HAS BEEN ESTABLISHED AS A DOUBLE FUNCTION OF TIME AND TEMPERATURE (QTTT) ; SOME NUMERICAL CONSTANTS ARE PRESENTED WHICH MAKE IT POSSIBLE TO INTERPRET THE TIME-TEMPERATURE TOLERANCES. THE AUTHOR HAS ESTABLISHED MATHEMATICALLY THE POSSIBILITY OF PASSING FROM THE CHEMICAL TESTS OR THE EVOLUTION AND VARIATION OF THE QUALITY INDICES TO A QUALITY CRITERION, PARTICULARLY IN THE CASE OF MEAT.
