Summary
THE AUTHORS PRESENT A 500-KG/HOUR-CAPACITY QUICK-FREEZING INSTALLATION, 2 OF WHICH WERE INSTALLED IN A PLANT FOR MAKING PELMINI (RUSSIAN RAVIOLI). THE INSTALLATIONS WERE MOUNTEDAS PART OF THE PLANT'S COMPLETE MODERNIZATION, WHICH THE AUTHORS DESCRIBE. FREEZING TIME WAS THUS REDUCED FROM 4-12 HOURS TO ABOUT 20 MINUTES. TESTS WERE CARRIED OUT ON OUTPUT, ENERGY CONSUMPTION AND VARIOUS TECHNICAL SPECIFICATIONS.
