Summary

OVER THE PAST 3 YEARS, 75 TONS OF GARLIC HEADS WERE TESTED FROM 271 (-2 DEG C) TO ABOUT 273 K (0 DEG C) AND AN AIR COMPOSITION OF APPROXIMATELY 6% CO2 AND 2-5% O2. AFTER 200 DAYS THE STORED GARLIC HEADS STILL MAINTAINED A COMMODITY VALUE OF ABOUT 90%, THE TOTAL SPOILAGE WAS LESS THAN 10% AND THE OUTER APPEARANCE SHOWED ORIGINAL FRESH COLOUR AND FLAVOUR. IN ADDITION, THE CONTROLLED ATMOSPHERE TENT WITH SILICON WINDOWS REDUCES THE LABOUR AND INCREASES THE RATIO OF UTILIZATION OF THE STORAGE SPACE.
