Summary

IN 1970 VACUUM PACKED CHILLED BEEF WAS SHIPPED COMMERCIALLY FOR THE FIRST TIME TO JAPAN AND IT WAS AN IMPORTANT EVENT IN THE HISTORY OF AUSTRALIAN BEEF EXPORT. SINCE THEN THE BEEF INDUSTRY AND RESEARCH INSTITUTES HAVE WORKED TO UPGRADE THE QUALITY OF CHILLED BEEF. THE REPORT DEALS WITH THE EFFECT OF PRESLAUGHTER FACTORS ON MEAT QUALITY, THE PROCESSING AND TRANSPORTING OF CHILLED BEEF AND PORTIONS AND CARCASS YIELD OF CHILLED BEEF.
