THE ELEMENTS WHICH AFFECT THE TRANSPORT OF MEAT IN CONTAINERS ARE HEAT TRANSFER, VOLUME, AIR DISTRIBUTION AND TEMPERATURE CONTROL AND RELATIVE HUMIDITY. THE USE OF LOW PRESSURE AND MODIFIED ATMOSPHERES. THE EFFECTS OF PACKAGING ON TEMPERATURE DISTRIBUTION, WEIGHT LOSS AND HANDLING ARE ALSO DISCUSSED, PARTICULARLY VACUUM PACKAGING FOR CHILLED LAMB. SOME PROPOSALS ARE MADE TO IMPROVE TEMPERATURE CONTROL AND AIR DISTRIBUTION IN INTEGRAL CONTAINERS. SOME EXAMPLES ARE GIVEN TAKEN FROM EXPERIMENTAL DATA.
