Summary

Some of the factors that govern the amount of microwave energy delivered to a water load by a domestic oven have been investigated in some depth and can now be quantified. There are still a lack of data on the factors that govern the temperature distribution within foods after microwave heating. The lack of data makes it very difficult for food manufacturers to optimise reheating instructions for microwave meals. The suggested 14-point plan, if used to develop reheating guidelines for a convenience meal, will take into account most of the available technology and knowledge.
