Summary

THE METHOD AND PROCESSING LINE, WITH THE APPLICATION OF AN EDIBLE COATING ON CARCASSES AND SEMI-CARCASSES AT THE TOKMAK MEAT PLANT ARE DESCRIBED. THE FIELD TESTING OF THIS METHOD SHOWED THAT ITS USE REDUCES MEAT SHRINKAGE DURINGTHE CHILLING, FREEZING AND STORAGE OF MEAT AND GIVES SAVINGS OF ABOUT 4.5 ROUBLES PER TON OF MEAT.
