Summary

MEASUREMENTS ARE REPORTED OF WEIGHT LOSS FROM BATCHES OF LAMB CARCASSES, STOCKINETTE COVERED, IN THREE DIFFERENT TYPES OF COLD STORES. IT WAS FOUND THAT LAMB CARCASSES LOSE MOISTURE AT A CONSTANT RATE FOR UP TO AT LEAST 10% WEIGHT LOSS. NEWER COLD STORES HAVE MORE UNIFORM BEHAVIOUR. STORAGE TEMPERATURE IS IMPORTANT BUT TEMPERATURE NON-UNIFORMITY IS MORE SIGNIFICANT. (REVISED VERSION OF PAPER PRESENTED AT IIR MEETING IN HAMILTON, NEW-ZEALAND, SEE PRECEDING ABSTRACT.
