Summary
THE CONCENTRATION OF CHICORY EXTRACTS IS STUDIED AS A PRELIMINARY PROCESS FOR FREEZE-DRYING. THE USE OF FRACTIONATED CRYSTALLIZATION ON COLD SURFACES TO A RATIO OF 35 TO 40% DRY MATTER IN WEIGHT WITH SUBSEQUENT FREEZING AND FREEZE-DRYING DECREASES THE DRYING TIME BY 22 TO 25% AND INCREASES THE YIELD OF PROCESSED PRODUCTS BY TWO-FOLD.
