Freeze-thawing behaviour of high concentration alkali salt-glucose aqueous systems.

Summary

With the sodium chloride-glucose-water system, single or double devitrification exotherms were observed during rewarming dependent on the composition. With the potassium chloride-glucose-water system, on the other hand, a single exotherm was observed during rewarming. The different freezing behaviour between sodium chloride and potassium chloride systems presumably reflects the different hydration structure, and observation of two devitrification exotherms in a single scan of the sodium chloride system indicates the presence of two different hydration structures around sodium chloride salt and glucose, respectively.
