Summary

THE MAIN CULTIVARS OF GRAPES IN JAPAN ARE DELAWARE, CAMPBELL EARLY, KYOHO, MUSCAT BAILEY A, NEO MUSCAT, KOSHU, PIONE AND KAIJI. AMONG THESE VARIETIES NEO MUSCAT, KOSHU AND KAIJI ARE VINIFERA GRAPES AND THE OTHERS ARE HYBRIDS OF VINIFERA AND LABRUSCA. IN ORDER TO EVALUATE QUALITY, CHANGES IN SUGAR CONTENT, ACIDITY, SUGAR-ACID RATIO, FLAVOUR, FLESH STRUCTURE AND COLORING WERE INVESTIGATED. THE SUGAR CONTENT OF GRAPES IS COMPOSED OF GLUCOSE AND FRUCTOSE WHICH INCREASE RADICALLY AFTER THE RIPENING PERIOD. IN EARLY MATURITY GLUCOSE IS GREATER THAN FRUCTOSE BUT FRUCTOSE IS DOMINANT IN LATER MATURITY.
