Freezing of mackerel in carton boxes: heat flow and freezing time.

Summary

Mackerel is more fragile than lean fish. Thus, storage must be carried out below -30 deg C and freezing must be rapid. Freezing tends to be more difficult when the fish does not completely fill the carton or box. Freezing experiments have been conducted with various packages, under different conditions and with a variable air velocity. The freezing process has also been simulated by computer. Measurements and simulations have been used to design new industrial freezing tunnels. Measurements on new tunnels have confirmed the simulation results and have also given additional information.
