Summary
This part of a series of papers (see also the Bulletin of the IIR, references 2006-0336 and 2009-1152), deals with technical and technological progress in industrial food processing and freezing. Alternative heating technologies are discussed, especially the use of so called active packaging. Additional operations in convenient frozen food processing are described, such as homogenizing, micro-encapsulation, extrusion. The special packaging for convenient frozen food is also presented.
