Summary
The domestic market of frozen noodle products has been expanding and the estimated value is getting to 130 billion yen per year. The expansion is based on the progress of technology such as noodle-production (including hygiene-control), freezing, handling (including transport and storage) and thawing (or cooking). But some technological problems related to frozen noodle products remain unsolved. In this article, the current state of frozen noodle products is discussed, mainly based on the technological aspects mentioned above.
