Summary

RESULTS ARE PRESENTED ON THE MEASUREMENT OF CONSUMER ACCEPTABILITY OF FOUR RETAIL FISH PRODUCTS DURING STORAGE FOR UP TO ONE YEAR AT 255 K (-18 DEG C). THE PRODUCTS WERE GLAZED COD FILLETS, BREADED COD FILLETS, COD FILLET FISH FINGERS AND COD MINCE FISH FINGERS. TO OBTAIN A WIDER OPINIONOF THE PRODUCTS, A COLLABORATIVE PROJECT WAS SET UP WITH 9 COLLEGES PROVIDING 350-400 ASSESSORS. THE DATA SHOW THAT ALTHOUGH SIGNIFICANT INCREASES IN TOUGHNESS, COLD STORAGE FLAVOUR AND DIMETHYLAMINE WERE FOUND, THE ACCEPTABILITY OF THE PRODUCTS UNDER THE PARTICULAR CONDITIONS USED FOR ASSESSMENT SHOWED NO SIGNIFICANT CHANGE DURING THE YEAR.
