THE FRENCH CONSUMPTION OF FROZEN VEGETABLES LITTLE VARIED BETWEEN 1981 (133,000 T) AND 1982 (134,000 T), WHEREAS PRODUCTION INCREASED BY 22%, FROM 119,000 TO 146,000 T, I.E. A DEVELOPMENT SIMILAR TO THAT OF APPARENT MARKET (132,327 T IN 1981, 162,000 T IN 1982). THE DISTRIBUTION OF CONSUMPTION WAS AS FOLLOWS IN 1982: 57% IN INSTITUTIONS AND 43% IN RETAIL MARKETS. THE AUTHOR COMPARES THE TONNAGES OF APPARENT MARKET AND CONSUMPTION, IMPORTS AND EXPORTS AND GIVES, FOR DIFFERENT VEGETABLES, THE WEIGHT OF FRESH PRODUCTS TO BE BOUGHT IN ORDER TO OBTAIN 1 KG OF VEGETABLES READY FOR USE. HE STRESSES THE PREFERENCE TO BE GIVEN TO THE INFORMING OF INSTITUTIONS WITH THE ADVANTAGES OF FROZEN VEGETABLES AND THEIR COOKING PROCESSES, AND THAT OF HOUSEHOLDS (ECONOMIC INTEREST). IN 1982, THE MOST POPULAR VEGETABLES WERE SPINACH, GREEN BEANS AND SNAP BEANS, PEAS, CAULIFLOWER AND BRUSSELS SPROUTS, AND MIXED VEGETABLES. G.G.
