THE BASIC MARKET FOR RAW VEGETABLES IS STILL SIGNIFICANT (80% OF THE MARKET), BUT A NEW TREND IS NOTED: THESE PRODUCTS ARE NOW SOLD IN BOXES RATHER THAN IN BAGS. NEVERTHELESS, A NEW SEGMENT OF THE MARKET IS DEVELOPING AT THE SAME TIME: VEGETABLE MIXTURES (15%OF THE MARKET) THANKS TO INNOVATIONS (RATATOUILLE, VEGETABLES FOR COUSCOUS, < EXOTIC > MIXTURES, SALADS, ETC) ; MOREOVER THE PRECOOKED VEGETABLES APPEAR ON THE SCENE, AS WELL AS ALL KINDS OF < PUREES > (6 TO 7,000 TONNES A YEAR WITH AN 100% INCREASE IN 1988), < MOUSSES > IN INDIVIDUAL PORTIONS, VEGETABLES PREPARED WITH CREAM, VEGETABLE FRITTERS AND VEGETABLES COOKED WITH CHEESE.
