THE HISTORY, DEVELOPMENTS AND PRESENT METHODS OF COOLING FRUIT FOR STORAGE ARE REVIEWED. REGULAR ATMOSPHERE AT 273 OR 272.5 K (0 OR -0.5 DEG C) FOR APPLES AND 272 K (-1 DEG C) FOR PEARS IS USED FOR MOST OF THE CROP. THE RESEARCH WORK INTO CONTROLLED ATMOSPHERE STORAGE CARRIED OUT IN DIFFERENT COUNTRIES IS REVIEWED. THIS METHOD, WHICH EXTENDS STORAGE LIFE OF SOME VARIETIES BY SIX TO NINE MONTHS, IS BEING DEVELOPED FOR THE STORAGE OF SOME 15 PER CENT OF THE MOST APPROPRIATE VARIETIES OF APPLES AND PEARS FOR BOTH HOME AND EXPORT MARKETS.
