Summary
Estimation of growth of L. monocytogenes in salted and unsalted labneh, and in humos (based on chick peas and sesame seeds) with and without oil, kept at 4, 10, 20 and 30 deg C. L. monocytogenes can survive for 3 days in humos. Storage at 4 and 10 deg in olive oil can reduce the level of contamination.
