THE AUTHOR PRESENTS THE PROBLEM OF THE HOLDING TIME FOR FROZEN FOODS IN THE COLD CHAIN AND DISCUSSES THE DESIGN OF THIS CHAIN ; HOLDING TIME AND TEMPERATURE FOR FROZEN FOODS, THEN CALCULATIONS FOR QUALITY CHANGES IN THE CHAIN. THE ESTIMATIONS OF THE EFFECT OF THE VARIOUS FACTORS ON THE FINAL QUALITY OF PRODUCTS SHOW ESPECIALLY THAT HIGH TEMPERATURES IN THE RETAIL TRADE MAY RESULT IN ANOTHER DECREASE IN PRODUCT QUALITY.
