Summary

Since Kidd and West's pioneering work on CA, it has been axiomatic that moderate CO2 concentrations benefit storage life, and therefore postharvest physiologists have assumed that because hypobaric storage is unable to elevate CO2, the method lacks the advantages which CO2 affords to CA. Some researchers have suggested that low-pressure hypobaric storage (LP) is simply an alternative method of creating a low O2 atmosphere. But if these opinions were accurate, how can we explain why in paired studies, LP usually produces a different and better result than CA and why is LP able to extend the storage life of certain commodities, which benefit relatively little or not at all from CA? Obviously there is more to this story and one purpose of this presentation will be to examine the factors, which distinguish LP from CA.
