Ice crystal growth in idealised freezing systems.
Author(s) : BALD W. B.
Type of article: Book chapter
Summary
A theoretical and experimental study on the effect of freezing rate on dimensional variations of ice crystals has been carried out. Mathematical equations to study ice crystal distribution in frozen foods are presented.
