Summary

THE AUTHORS STUDIED FOUR SURFACES WITH DIFFERENT PROFILES IN A MULTI-ZONE QUICK-CHILLING INSTALLATION USING NITROGEN, AND THEY FOUND THAT THE GROOVED SURFACE, WITH A HEIGHT AND PITCH OF GROOVES OF 0.005 METRE, WAS THE MOST EFFICIENT. THE FREEZING PARAMETERS OF PIECES OF MEAT ANDMINCED MEAT, WHOSE THICKNESS IS 0.01 TO 0.03 METRE, WAS DETERMINED ON SUCH A GROOVED SURFACE. FROM EXPERIMENTAL AND ANALYTICAL DATA, A NOMOGRAM WAS DEVELOPED, WHICH DETERMINES THE PROCESS PARAMETERS. C.C.
