Summary
The problems of cold storage technology of milk products are considered in the paper. Low-temperature refrigeration regimes, freezing and storage of milk products (butter, rennet and processed cheeses, cottage cheese) making it possible to increase their storage life are presented. Data about the developed rates of consumption of refrigeration in production and storage of milk and milk products are included.
