AN ACID SPRAY (2.0% ACETIC ACID; 1.0% LACTIC ACID; 0.25% CITRIC ACID; 0.1% ASCORBIC ACID; UP TO 100% WATER AS SOLVENT) WAS DEVELOPED EXPERIMENTALLY AND TESTED ON BEEF AND SHEEP CARCASES HELD AT RAISED TEMPERATURES 280 AND 283 K (7 AND 10 DEG C). THE BACTERIAL COUNTS OF CARCASES TREATED WERE MUCH BETTER THAN THOSE OF THE CONTROLS, A SELECTIVE INHIBITING EFFECT ON ENTEROBACTERIACEAE AND COLIFORM BACTERIA BEING OBSERVED.
