AN ACID SPRAY (2.0% ACETIC ACID ; 1.0% LACTIC ACID ; 0.25% CITRIC ACID ; 0.1% ASCORBIC ACID ; UP TO 100% WATER AS SOLVENT) WAS DEVELOPED EXPERIMENTALLY AND TESTED ON BEEF AND SHEEP CARCASES HELD AT 280 AND 283 K (7 AND 10 DEG C). THE BACTERIAL COUNTS OF CARCASES TREATED WITH THE ACID SPRAY WERE MUCH BETTER THAN THOSE OF THE CONTROLS, A SELECTIVE INHIBITING EFFECT ON ENTEROBACTERIACEA AND COLIFORM BACTERIA BEING OBSERVED.
