Summary

STUDIES WERE CARRIED OUT ON DRY-ICE LOSSES DURING STORAGE, TRANSPORT AND MANUFACTURE OF ICE CREAM. FIVE FIRMS WERE EXAMINED. IN 2 OF THEM, THE ICE IS MADE BY THE PRESSING METHOD, AND IN THE OTHERS BY USING ICE GENERATORS. RESULTS ARE GIVEN OF LOSSES, WHICH VARY ACCORDING TO THE MANUFACTURE AND STORAGE METHODS. LOSSES DURING TRANSPORT ARE LOWER IN THERMALLY-INSULATED ISOTHERMAL BODIES HAVING A CAPACITY LESS THAN 2.5 TONNES. A COMPUTER WAS USED FOR CALCULATING LOSSES DURING TRANSPORT OF ICE CREAM, BY USING DATA FROM DRY ICE IN ISOTHERMAL VEHICLES. DATA OF DRY ICE CONSUMPTION IN SPECIALIZED COMMERCIAL EQUIPMENTWAS ALSO GIVEN. C.C.
