Summary
The red pear cultivars Crimson Gem, Cascade, Red Anjou, Rogue Red and standard cultivars Comice (Doyenné du Comice), Packham's Triumph and Bosc (Beurré Bosc) were harvested at optimal commercial maturity and held in low oxygen (0.25, 0.5, 0.75, 1, 1.5 or 2%, or in air) storage at -1 deg C for up to 10 months. Quality evaluations such as sweetness, acidity, astringency, aroma, texture, juiciness, off-flavour and overall quality were judged on a 0-15 hedonic scale by organoleptic assessment.
