Summary

Investigation of the resistance of several Lactococcus lactis, Streptococcus thermophilus, Enterococcus faecalis, Lactobacillus lactis and L. helveticus strains during 5 months of storage at -30, -80 or -196 deg C, after liquid nitrogen freezing. Storage at -80 deg C seems to be the most efficient method for preserving these lactic starters.
