Managing cold rooms so as to minimize mass losses in stored products.

Gestion des chambres froides en vue de minimiser la perte de masse des produits entreposés.

Author(s) : GAC A.

Summary

As is well known, weight loss in stored food is of major economic concern, especially in the case of chilling; it is also common knowledge that weight loss depends on the temperature of the evaporator. A careful study of the operating conditions of a cold room shows that several factors should be taken into account, particularly: 1) the method of feeding the evaporator (direct injection or overfeed); 2) the room's load factor; 3) how much frost is built up on the evaporator; 4) the quality of the insulation and airtightness of the rooms' walls; 5) the daily operating time of the refrigerating machine; 6) the properties of the outside air (this factor is not discussed in the paper).
