This thesis submitted in fulfilment of the requirements for the degree of Doctor of Philosophy, at the School of Chemical Engineering and Industrial Chemistry, the University of New South Wales develops computer models to enable the heat load prediction over time. Extract from the table of contents: materials and method; preliminary analysis of heat load, weight loss and product temperature; preliminary modelling objectives and considerations; finite difference model; finite element model; comparison of models; conclusions and recommendations. In the appendices: radiative heat loss from the beef side to the tunnel walls; central composite design tables; finite difference approximation; diskette with data files and model programs An amendment to the thesis (17 pages) is added. During the Sydney Congress of the IIR, September 19-24, 1999, the author was awarded the IIR Clarence Birdseye Prize to Young Researchers for this work.
