Summary

HISTOLOGICAL STUDY OF LONGISSIMUS MUSCLES OF ELECTRICALLY STIMULATED BEEF CARCASSES. A DETERIORATION OF THE ULTRASTRUCTURE OF THESE MUSCLES WAS OBSERVED 48 HRS AFTER ELECTRICAL STIMULATION. THIS EFFECT MAY BE DUE TO A PHYSICAL RUPTURE OF MUSCLE FIBRES, THE PRECIPITATION OF SARCOPLASMIC PROTEINS AND/OR AUTOLYTIC PROTEOLYSIS. (Bull. bibliogr. CDIUPA, FR., 16, N.2, 1982/02, 72, 165049.
