Summary

Fish captured in the sea have normal microbiotic bacteria that are harmless in healthy humans, but in certain circumstances can be contaminated by pathogenic microorganisms and produce diseases (food poisoning or infections). In this study, 40 lots of tuna fillets of different brands were analysed, with the purpose of evaluating the present levels of contamination in these products. The results confirm the presence of total enterobacteria, lactose-positive enterobacteria and Staphylococcus aureus in amounts that, in 5% of the samples, exceed the established limits.
