Summary
This book is part of the "Food and Nutrition" collection of the FAO. It reports on all the nutritional aspects of milk and dairy products, while taking into account the scientific and technical findings of recent years. The physico-chemical properties, and the composition and nutritional qualities of farm milk from the main domestic animals are analysed.
