THE PAPER GIVES A GENERAL SYNTHETIC STUDY OF THE EVAPORATION AND DRYING PROCESSES FOR MILK, INCLUDING TURBOCOMPRESSION AND EVAPORATION BY REFRIGERATION. FOR TURBOCOMPRESSION, THE OPTIMIZATION OF EVAPORATORS FROM 5 TO 20 T/H GIVES THE FOLLOWING RESULTS: EVAPORATION AT 338 K (65.C) BETWEEN 5 TO 6 K (5 TO 6.C); 1 KWH PROVIDES THE REMOVAL OF 50 KG WATER, CORRESPONDING TO A COP OF 33. EVAPORATION BY REFRIGERATION OR BY AN INDIRECT HEAT PUMP, WHICH IS NOT MUCH USED, HAS THE ADVANTAGE OF ALLOWING VERY LOW EVAPORATION TEMPERATURES, LOWER THAN 293 K (20.C). A.G.
