WITH THE MEAT-BONE SEPARATOR, FLESH CAN BE RECOVERED, OF WHICH THE DARKER RED COLOUR HAS GENERALLY BEEN CONSIDERED UNACCEPTABLE IN THE RAW FORM BECAUSE OF THE COLOUR AND THE PRESENCE OF ASSORTED WHITE AND BLACK PARTICLES ; THE GADOIDS IN PARTICULAR ALSO SHOW A MORE RAPID TEXTURE CHANGE. ALL OF THESE DEFECTS DISAPPEAR WITH PREPARED AND COOKED PRODUCTS. GROUND FISH CAN REPLACE GROUND BEEF IN THE NUMEROUS AMERICAN AND BRITISH PREMIXED PRODUCTS THAT CALL FOR THE ADDITION OF GROUND BEEF.
