Modelling of bulk-stacked cheese cooling in coolstores.

Summary

The cooling time of cheese blocks bulk-stacked in cold stores has been predicted using a simple model of internal thermal conductivity with convective heat transfer at the surface. Methods to define effective thermal characteristics and heat transfer coefficients are described. The differences between predicted and measured temperature profiles can be attributed to imprecise measured data, particularly thermal conductivity, air temperature, probe locations and initial temperature uniformity. This method can be used in cases where air does not flow through the product.
